Crockpot Chicken & Gravy
Creamy, cozy, stupid easy, and really hard to screw up.
This is one of those meals where you dump everything in the crockpot, walk away, and come back to supper basically being done. Serve it over mashed potatoes, a baked potato, rice, or noodles. Add a vegetable, don't add a vegetable, make it yours. And yes, you can prep the whole thing the night before so tomorrow-you has one less thing to think about.
What you'll need
- 3 to 4 boneless, skinless chicken breasts
- 1 can cream of potato soup
- 1 can cream of chicken with herbs soup
- 1 packet chicken gravy mix
- Kinder's The Blend seasoning, to taste
- About 1/2 cup water or chicken broth
- About 3/4 cup heavy whipping cream
- Frozen fire-roasted corn, as much as you want
How I make it
- 1
Add the chicken breasts, cream of potato soup, cream of chicken with herbs, chicken gravy packet, seasoning, and about half a cup of water or chicken broth to the crockpot.
- 2
Cook on low for about 8 hours.
- 3
About an hour before serving, take the chicken out, shred it, and put it back in the crockpot.
- 4
Stir in the frozen corn and about three quarters of a cup of heavy whipping cream.
- 5
Cover and let everything cook together for another hour or so. This gives the chicken time to soak up all that creamy gravy goodness.
- 6
Spoon it over mashed potatoes, baked potatoes, rice, or noodles.
Extra notes
Don't get hung up on the measurements. This is not a precision recipe. If it looks too thick, add a splash more broth, water, or cream. If it looks good, leave it the hell alone.
Forgot the corn? Microwave it first and stir the warm corn in after you've shredded the chicken. Supper is still saved.
Don't love corn? Swap it for peas and carrots, use another frozen vegetable you like, or skip the vegetables completely.
Want noodles? Cook them separately and stir them in before serving. You may want a little extra broth or cream since the noodles will soak up some of that sauce.
Make tomorrow easier: assemble the chicken, soups, gravy mix, seasoning, and liquid in the crockpot insert the night before, cover, and refrigerate. In the morning, put the insert in the crockpot and turn it on. Making your future self happy absolutely fucking counts.
Mashed potatoes are probably my favorite, but this is a use-what-you-have meal. Baked potatoes, rice, egg noodles, or another pasta would all work too.
